Butterfly Grilled Chicken

We’ve been blessed with a beautiful few days of high pressure weather that brought blue skies, moderate temperatures and a nice breeze.  I have been spending hours on end O.U.T.S.I.D.E.  Hurray!  Just the kind of weather that calls for a a simple meal that can also be eaten out doors.

I cut the chicken and opened it up then popped it on the grill after liberally seasoning it all over…So simple, so delicious.  Our asparagus is done but the farmers market still had some nice looking spears.

Much gardening has been getting done.  We’re pretty much all planted out and the fall crops are beginning to sprout up.  The scapes are coming on and the corn is cruising right along, surely will make the “knee high by fourth of July” mark.  The elderberries are beginning to flower and the strawberries have yielded vast quantities.  I’m so very thankful that the rains have ceased.

Training is going well except for a glitch with my right elbow.  Tried doing my barbell curls (30#) and the elbow had a sharp pain that said, “Oh no you don’t!”  At this stage of my life, I can take the hint and not push it 😉

Summer family reading time has come.  We share a book and take turns reading aloud.  Tonight we are beginning The Pearl, by John Steinbeck.  We often do dinner and a movie on Friday night but this book will only take a few days to read and we have no movies on tap.   Happy wonderful weekend everyone.

    • Yay! We find it really great to be ‘on the same page’ so to speak. When dd was young we read through the entire Little House series together every night for a few years. It took us to many interesting places and we learned a host of fun stuff…dd is still the ‘eggnog maker’ at holiday time, courtesy of Laura’s recipe.
